В 2008 году Рэй дебютировал в спектакле «Во имя моего имени» в Театре Вэст-Энда.

В 2013 году Пантаки снял свой дебютный короткометражный фильм под названием «Пожизненный приговор», который был удостоен Премии Британской академии кино и телевизионных искусств «BAFTA» в номинации «Лучший короткометражный фильм».

Позднее актер несколько раз играл на сценах Королевского театра и Королевского Шекспировского театра.
